Cod brandade


250 grams of salt cod into pieces
100 ccs of evaporated milk
75 ccs olive oil
2 cloves garlic
2 slices of fried bread
1 teaspoon chopped parsley
1 pinch of pepper
1 pinch of salt

Place the cod in a saucepan on the fire with a little water with salt. Bring to a boil and remove and let it rest 15 minutes with the pan covered. Drain and crumble removing skin and bones. In another pan add a little oil and lightly fry the garlic then withdrawing. Add the cod and cook over low heat, stirring continuously until a fine paste. Gradually add the remaining oil slowly. Add the hot milk and continue riding the set until completely absorbed the oil and milk and mash look. Add salt and pepper. Sprinkle chopped parsley and serve with triangles of fried bread.
